Skirt steak is the cut of choice for making fajitas, ranchera, stir-fry, churrasco, and in Cornish pasties. To minimize toughness and add flavor, skirt steaks are often marinated before grilling, or pan-seared very quickly, or cooked very slowly, typically braised.
